Do you remember having Chow Mein as a kid? I remember it, but the version I remember consisted of hamburger with a can of La Choy Chow Mein added in with some crunchy noodles thrown on top. My version is much better! It uses chicken sausages and a fresh sauce with soba noodles. I love any type of food that is Asian, and this is a quick and easy recipe when I have a craving.
Updated Chicken Chow Mein
Ingredients
- 5 tablespoons vegetable oil
- 1 pound chicken sausages
- 4 garlic cloves, minced
- 2 tablespoons minced ginger
- 4 ounces snow peas, cut in half
- ½ tsp. red pepper flakes
- 1/2 pound sobe noodles, cooked
- 1/3 cup orange juice
- 1 cup chicken stock mixed with 3 tablespoons of hoisin sauce and 2 teaspoons of cornstarch
- Salt to taste
Instructions
- In a wok or large pan, heat 2 tablespoons of the oil. Add the chicken sausage and fry over medium high heat, until just cooked through, per package directions. Transfer to a plate, when cooled, slice into 1 inch pieces.
- Heat the remaining 3 tablespoons of oil in the wok. Add the garlic and ginger and stir-fry over moderately high heat until golden, 1 1/2 minutes. Add the snow peas and red pepper flake. Add the orange juice and stir over moderately high heat for 30 seconds. Add the sauce mixture, stir until thickened, about 2 minutes. Add the noodles and sausage, season with salt and stir-fry for 4 minutes. Remove from the heat and serve.
- You could use a jalapeno or red chile pepper in place of the red pepper flakes. You could use a spaghetti noodle in place of the sobe noodes.
